Baked Potato Chips

If you are like me, you are careful of what you eat, well… most of the time. So when you watch a movie, or spend a night in, and you feel the urge for something salty, comforting and good, like chips… here’s the alternative. These baked potatoes will satisfy your urges and will keep you happy. Homemade chips taste even better than grocery stores chips! I have to be honest here, I thought that when I bought these potatoes, they were sweet potatoes(dumb moment). I actually planned on making baked sweet potatoes, when I cut the first sliced I was like… Uh-oh. But they turned out very delicious. You can make this recipe with whatever potatoes you feel like eating. But sweet potatoes must be better…I’ll make sure I buy the right potatoes next time…

Baked Potato Chips

The ingredients arreeeee:

  • 2-3 medium-size potatoes, sliced in 1/4 inch-thick(or whatever quantity you feel like)
  • 2 tbsp olive oil
  • 2 tbsp chili powder(or whatever other spice you like)
  • Salt

First, preheat oven at 400° and line two baking sheet.

Make sure to wash well the potatoes before slicing them. In a large bowl, put potato slices and add the olive oil, chili powder and salt. Toss with your hands to combine.

Spread out potato slices on baking sheets and then place one baking sheet in the center of the oven and the other on the bottom. Bake for about 25 to 30 minutes, or until crispy on the outside and little bit soft in the middle. Flip potato chips halfway through. Let dry for 5 minutes and sprinkle with a little bit of more salt. Put them in a bowl and serve!

Spinach, Eggs and Feta Wrap

Remember this Egg bake recipe? Well I found an on-the-go alternative. You know how like good healthy low calories meal that I can make under 20 minutes… Well this is the perfect recipe for that. It really takes only 15 minute big maximum! Since I train a lot I need to eat a lot protein to repair my muscle after each workout. I don’t feel like taking supplement so whenever I can combine good protein in an after workout meal, I’m happy. This meal will also keep you full and will give you energies for the rest of your day.

Spinach, Eggs and Feta Wrap.

The ingredients arreeeee:

  • 1 small-size whole wheat tortilla
  • 1 cup or large handful of baby spinach
  • 2 eggs(or three white)
  • 1/4 cup crumbled fresh feta cheese
  • 1 tsp Olive Oil
  • Salt and pepper to taste

First, heat the olive oil on medium heat and drop the handful of baby spinach on the frying pan and cook for 2-3 minutes. Add the 2 eggs and crumbled feta cheese. Make sure to scramble well the ingredients together, keep scratching the eggs from the pan. Cook until there’s no liquid left form the egg. Make sure you don’t over cook. You don’t want brown eggs.

Remove the pan from the heat and place the eggs, spinach and feta scrambled in the center of the tortilla. Fold in the tortilla and grill on  the pan on medium-high heat for 2-3 minutes each sides.

Serve with vegetables and hummus on the side and enjoy!

This gives 1 serving, about 350 calories.

Apple, Cranberry and Walnut Spinach Salad

Here’s a quick an easy salad to make when you are on the go and needs to have your protein, vegetables & fruits portions. I made one portion of this salad and I couldn’t even finish it! I was so full and it took only 5 minutes to make this salad. Perfect for the busy bees out there who are always in a rush.

Apple, Cranberry and Walnut Spinach Salad

The ingredients arreeeee:

Salad

  • 1 1/2 cup baby spinach(a big handful)
  • 1/2 apple, sliced
  • 3 tbsp dried cranberries
  • 2 tbsp of walnuts halves
  • 2 slice of brie* optional

Vinaigrette

  • 2 tsp olive oil
  • 1 tsp balsamic vinegar
  • salt and pepper to taste

Pretty simple here, just slice half of the apple and add the dried cranberries, walnuts and brie(optional) to the baby spinach. In a small bowl mix the olive oil, balsamic vinegar, salt and pepper to taste. Mix in with the vinaigrette and voilà!

Baked Oatmeal with Blueberries and Bananas

My go to breakfast is usually oatmeal with fruit and a toast. When I stumbled upon this recipe the other day I was so happy. This is the perfect healthy breakfast! I did it with blueberries and bananas but you can do it with any of your favorites fruits. I like to eat blueberries in the morning because it’s a good antioxidant so I followed the original recipe by Skinnytaste.  This is a great healthy breakfast and it’s the perfect start for a day. Enjoy!

 
Baked Oatmeal with Blueberries and Bananas

The ingredients arreeeee:

  • 2 medium ripe bananas
  • 1 1/2 cup blueberries
  • 1/4 cup honey
  • 1 cup  quick oats
  • 1/4 cup chopped walnuts
  • 1/2 tsp baking powder
  • 3/4 tsp cinnamon
  • pinch of salt
  • 1 cup fat free milk
  • 1 egg
  • 1 tsp vanilla extract

Preheat the oven to 375° F.

Place the bananas on the bottom of a 8 x 8 inches ceramic baking dish in one single layer. Sprinkle half of the blueberries on top of the bananas and then add 1/4 tsp of cinnamon, 1tbsp of honey and cover with foil. Bake for 15 minutes.

Combine and stir the quick oats, half of the nuts, baking powder, remaining cinnamon and salt in a bowl. In a different bowl, combine the remaining honey, milk, egg and vanilla. Whisk.

If there’s still time before the bananas are cooked dance to the new No Doubt song.

 

Now, get the bananas out of the oven and pour the oatmeal mixture over and then pour the milk  mixture after. Try to distribute it evenly. Sprinkle the remaining blueberries and walnut on top. Don’t drop the rest of the blueberry package like I did.

Bake for 30 minutes and tadammm!  So yummy!

This recipe give 6 servings. Each serving are about 215 calories.

Oh and sorry about the photos. I forgot to take photos during the making of the recipe…. I was concentrating on not screwing up too much.
