I am sorry for not posting lately. Like you know from my previous post, I am in my hometown in New-Brunswick. I try to enjoy the sun, the water and my friends as much as I can. Even thought I am not posting until next Saturday, I am preparing a great post for you about my trip. Keep an eye out for Saturday!

Lemon Raspberry Cupcakes

So for this recipe I wanted to do cupcakes because I felt festive. This week is my week off and I’m in my hometown with good friends so I did raspberry and lemon cupcakes. I found this combination of raspberry and lemon interesting an it sounded very delicious(and it is!) and fresh. Instead of the usual vanilla or chocolate cupcakes I thought this was a good idea. Plus, for the icing, I made a raspberry cream cheese icing. I found an adapted recipe from Martha Stewart on Cupcakes for Breakfast and it was the best version I could find. But this is my slightly adapted version. It Turned out very good. I made 24 and the next day it was almost all gone.

Lemond Raspberry Cupcakes

The ingredients arreeeee:

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter
  • 2 cups sugar
  • 4 large eggs
  • 3 tablespoons of lemon zest
  • 2 tablespoons of lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • Seedless raspberry jam

Icing:

  • 1 block of 8 ounce cream cheese, room temperature
  • 1/2 cup butter, room temperature
  • 41/2 cups powdered sugar
  • 1/2 cup of raspberries

I suggest making the icing at first because you will need to put it in the refrigerator 30 to 60 minutes before putting it on the cupcakes.

First, beat the butter and cream cheese in a medium bowl and gradually add sugar a little at a time. Beat well after each incorporation. Smash the raspberries and beat in until well blended. Place in the refrigerator.

For the cupcakes, preheat oven at 325°.

Whisk together the flour, baking powder and salt. In a second bowl, beat the butter and sugar until light and fluffy. Incorporate one egg at a time then the lemon zest and vanilla, beating well after each addition. Add the flour mixture and the buttermilk a little at a time alternating between each other. Then add the lemon juice. Beat well.

Fill the cupcakes cups up until 3/4 and then add a teaspoon of jam in the center of each. Press a little on the jam to push down in the batter.

Bake 20 minutes or until golden.

Gives 24 servings.

The Casual LBD

{Urban Outfitters dress, Aldo necklace, Glaze shoes}

It’s Friday which means, in a couple of hours I will be on the bus on my way to my hometown in New-Brunswick! I can’t wait to see all my friends from there.  It’s been since last Christmas that I didn’t have a chance to go there. This weekend will be all about relaxing, eating ice cream, walking around town, going to my favorite Café(Lotus Bleu) and have drinks on a patio at night. I’ll need to wear something casual during the day to walk around town but something dressy enough to go out and have drinks at night. This outfit is my casual LBD. I wear it as simple as possible to not look too dressy.  You could add bright colored pumps with gold cuff and it would be perfect to go at a lounge or an event. I decided to wear it with thighs to make it more casual since it’s a very short fitted dress and I added taupe wedge with a simple necklace. This dress will translate well from day to night. Enjoy the weekend everyone!

Carry Me Always

If I could, I would buy 1000 handbags per year. But I can’t afford it and even if I could it would be crazy to buy that much. For some reasons handbags are one of the most exciting accessories to purchase for me. I get maybe 4 handbags a year and every time I buy one I get butterfly in my stomach. It’s like a new start. I don’t know if it’s considered weird(tell me I’m not the only if not) but it’s really satisfying to move your wallet, phone,keys, cards, lipsticks and tampons from your old handbag to your new one. It feels so refreshing! I’m sure a camel in the desert must share that same feeling when they found water after 2 days of walking. So anyways, I got this handbag here. It’s a Danielle Nicole Mia Shoulder. Well, Danielle, you have a 5 stars from me. This one here is a keeper. It’s great quality for a low price and it looks very sophisticated and classy. The vintage style and the combination of colors add an extra sparkle to any outfits!
