Before I found the blog Skinnytaste, I never really cooked that much. It sounds so simple the way Gina describes her recipes(not always simple). It’s well explained, well written and it looks so yummy that it makes me want to give a shot at cooking. Plus, all of her delicious recipes are healthy. So in this section of my blog I will test some of her recipes as well as other recipes blog. For all of the non-cook out there, I will show you that you can cook too, or not. You can just tell your mom or boyfriend to do it.
For my first test, I will share a Lemon Cranberry Scones recipe. You can find the original recipe here. Breakfast is my favorite meal of the day and I’m always looking for differents ways to start my day.
The ingredients arreeeee:
- 2 tbsp sugar
- 2 tbsp fresh lemon juice
- 1/2 cup low fat buttermilk
- 1/4 cup sugar
- 1 tbsp lemon zest
- 2 tsp vanilla extract
- 1 large egg
- 2 cups Ultra grain flour (or 1 cup white, 1 cup whole wheat)
- 1 tbsp baking powder
- 1/2 tsp salt
- 3 tbsp chilled butter cut into small pieces
- 3/4 cup dried sweet cranberries
First, put the rack at the top 3rd of the oven and preheat at 375°. I did it at 350° because my oven think he’s hotter than everyone.
In a medium bowl, combine the low fat buttermilk, 1 tbsp of lemon juice, sugar, lemon zest, vanilla and that large egg of yours. Stir it with a whisk.
In a larger bowl, combine the flour, baking powder and salt. Stir with a whisk. You will develop the muscle in your wrist if you keep doing that. It could be handy.
After, cut in the chilled butter with the mixture. When you finish that, fold in the cranberries. Add the buttermilk mixture, stirring until moist. Then, you will have a dough and it will be really sticky and annoying. Don’t answer your text message while doing this.
Now, place the dough on a floured surface. Like I said, I’m not a cook so I didn’t know what was going to happen if I didn’t put the dough on a floured surface so put flour or you will regret it. You will also need to floured your hand because you need to knead it at least 6 times to make sure the ingredients blends well. Place the dough on a baking sheet with lined parchment. You need to make an 8 inch circle and then use a knife and cut the dough in 10 wedge. Do not cut all the way through. Leave it there for 1 minute because you need to make the glaze before putting it into the oven.
For the glaze, combine 2 tbsp of sugar and 1tbsp or that remaining lemon juice. Brush the lemon gaze over the dough. Now it’s ready to be bake. Bake 18-20 minutes or until golden.
Eat. Well wait before it cools down but eat one after.
This recipe give 10 servings. Each servings are 192.5 Calories.
